Loaded potato wedges recipe

A great way to use up potatoes, bacon or ham.

Serves 4 to 6.

Preparation time: 10 minutes.

Cooking time: 25 to 30 minutes.

Ingredients

750g potatoes

150g grated hard cheese

6 to 8 slices bacon or ham (or whatever quantity you have)

4 medium spring onions

Oil for cooking

Method

  1. Preheat the oven to 200C or fan 180C or gas mark 6.
  2. Wash the potatoes. Chop into wedges (no need to remove the skin unless they are sprouting). Drizzle a little oil over the potatoes and pop in the oven for 25 to 30 minutes until golden.
  3. Whilst the wedges are cooking grate the cheese, chop the bacon or ham and spring onions.
  4. When the potatoes are nearly ready sprinkle over the bacon or ham, spring onions and cheese and bake in the oven until cooked.

Serve with non pesto sauce.

Variations

To spice up your wedges sprinkle with a little paprika, chilli powder or cumin.

Vegetarian? Then leave out the meat.
