Banana loaf recipe

Great to use up ripe bananas.

Ingredients

140g butter, softened, plus extra for the tin.

2 large eggs, beaten.

140g self-raising flour.

1 teaspoon baking powder.

2 very ripe bananas, mashed.

Method

  1. Heat oven to 180C or 160C fan or gas 4. Butter a 2lb loaf tin and line the base and sides with baking parchment.
  2. Cream the butter and sugar until light and fluffy, then slowly add the eggs with a little flour.
  3. Fold in the remaining flour, baking powder and bananas.
  4. Pour into the tin and bake for about 30 minutes until a skewer comes out clean.
  5. Cool in the tin for 10 minutes, then remove to a wire rack.

Variations

Try the following, or your own ideas:

  • when folding bananas into the mixture, throw in a few dark or milk chocolate chips (or chopped leftover Easter eggs)
  • add a few chopped unsalted nuts for texture and flavour
  • sprinkle a little Demerara sugar on the top before baking for a crunchy top
  • mix a couple of tablespoons of icing sugar with a little lemon or orange juice and drizzle over the cake once its cooled
